Žutenica s jajima
Ingredients:
- 1 kg of žutenice
- 8 hard-boiled eggs
- ½ teaspoon of olive oil (0.5 dl)
- ½ teaspoon of wine vinegar (yeast)
- salt and very little pepper
Preparation:
Clean the yolk, wash it and put it in previously salted boiling water. Cook for 5 to 10 minutes (it must not change color or overcook). Strain and let it cool (it can also be poured with cold water to cool completely), then drain well and place in a large bowl. Mix oil, yeast, salt and pepper in a saucepan and evenly season the yolk.
Separately hard-boil the eggs, cut them into pieces and add to the yolk. Mix the mixture well and additionally cut it into small pieces (best with two sharp knives).
Remark:
Zutenica with eggs is a typical heavy dish on the Zadar islands. It was usually prepared for brunch or dinner.
