Patišpanj is foamy, soft, full of flavor and aroma, a wonderful old-fashioned cake.

Ingredients:

  • 10 spoons of sugar
  • 10 tablespoons of flour
  • 10 eggs

Preparation:

Beat the eggs and sugar until foamy. Using a food processor, gently mix in the sifted flour. Mix the mixture lightly and pour it into a greased and floured baking pan. Place the biscuit in a heated oven and bake for about 65 minutes at 150 degrees Celsius. Use a toothpick to check whether the cake is baked – if a toothpick comes out dry, it is ready to be taken out of the oven. When it cools down, you can sprinkle the cake with lemon zest and sugar as desired. There are variations on the theme of this cake, but the only important thing is that it is made with home-made eggs.

Serving:

It is excellent with coffee or some fine wine.

Patišpanj is a traditional cake that has been prepared for generations. It consists of only three ingredients: eggs, flour and sugar. This cake was served as a wedding cake in the past and was served on
wedding celebrations. It was also done for various other occasions such as births, baptisms, etc. The ingredients for its production were easy to obtain, so it was available to the general population. Patišpanj thus spread among the people who worshiped him.
Patispanja literally means “Spanish bread”, because in Italian “Spanish bread” is “pan di Spanja”. Traditional patišpanj is made without baking powder, so some patience is needed to create air bubbles in the dough by mixing. Some cookbooks specially beat the egg yolks with sugar, by hand for about half an hour, then add egg white snow, and according to other recipes, the eggs are beaten in
piece. Padišpanj used to be baked in old-fashioned dishes without grease or baking paper, so it would be left to cool upside down and then separated from the wall of the dish with a knife. Today it is easier to bake it in a cake pan. In order to make the cake more fragrant, lemon or orange zest, vanilla, almond aroma or liqueur, and prosecco are sometimes added.
