  • 7 eggs
  • 2 cups of white smooth flour
  • 1 cup of sugar
  • 2 vanilla sugars
  • the grated rind of one local lemon
  • ½ cup of oil
  • ½ cup of water
  • 2 tablespoons of liqueur (from anise or maraschino)
  • a pinch of salt
  • powdered sugar for sprinkling (optional)



Beat egg yolks, sugar and vanilla sugar in a deep bowl (with a whisk or mixer) until the mixture is foamy. Add oil and water alternately, then mix sifted flour with baking powder, grated lemon peel and a pinch of salt. Beat the egg whites to stiff peaks and slowly mix them into the mixture with a whisk (not a mixer). Pour into a greased mold or a larger bowl and bake for one and a half hours at a temperature of 150 degrees. When the biscuit is baked, take it out of the oven and turn the bowl upside down to cool and sprinkle with powdered sugar. Padešpanj is usually prepared for particularly festive occasions, it is a must-have dessert at weddings.
