Njoki
Ingredients:
- ½ kg of potatoes
- 20 dag of white flour
- 2 tablespoons of oil
- ½ teaspoon of salt
Preparation:
Wash the potatoes and put them in their skins to boil in cold slightly salted water. Clean the boiled potatoes and mash them on a dough board. Add flour, salt, eggs and oil to the hot potatoes and knead a uniform dough. Roll the dough on a floured board into a long “sausage”, which we then cut into smaller pieces. Using our hands, shape these pieces into balls and place them in salted boiling water. The gnocchi are cooked when they float to the surface and we remove them with a spatula and put them in cold water.
Note:
Of course, gnocchi are not typical only for Zadar county, but they are a frequent accompaniment to various stews, pashticada and other dishes in šug. However, they are often the main meal, especially if they are prepared with tomato sauce. This recipe was recorded in the city of Zadar
