The Zadar region is a unique combination of Velebit and the Mediterranean. Its culinary heritage is a natural reflection of geographical peculiarities, but also of turbulent historical changes. The traditional cuisine of the Zadar region is based on fresh local ingredients, lots of fresh vegetables and legumes (lentils), simple preparation with the addition of olive oil and very little spices and herbs. Meat was eaten and mostly cooked (lešo), and fish was often prepared on gradele or brudet. The most important desserts are fritters, kroštula and strudel.

As part of the project “EnhanCing Sustainable Tourism Development through Culinary HeritAge – CUHaCHA”, on 02.12.2022. year, after the end of the project conference, a culinary heritage fair of Zadar County called CUHaCHA Zadar CookingFest was held.
