HNŽ-K service providers trained to prepare traditional dishes

A theoretical workshop within the project “EnhanCing Sustainable ToUrism Development through Culinary HeritAge – CUHaCHA was held on the 13 December 2022 in the premises of the Red Cross of the City of Mostar. The workshop is intended for catering facilities that prepare and serve traditional food in the area of HNŽ-K. The aim of the theoretical workshop was to point out the importance of preserving the quality and recognition of traditional dishes, and to train workshop participants on how to present food to visitors in the best way. The topics covered in the theoretical workshop are: introduction to the culinary heritage of Herzegovina-Neretva County, staple foods, local and regional cuisine, ways of presenting food, and preserving the quality and distinctiveness of traditional dishes. The lecture was held by Mr. Đenan Ljevo, chef of the restaurant Šadrvan in Mostar.

In addition to the theoretical workshop, three practical workshops will be held in the coming days in the kitchen equipped as part of the CUHaCHA project in the premises of the Red Cross of the City of Mostar. The practical workshops will demonstrate food preparation, determining portions, creating a menu, and arranging and serving food. The leader of the practical workshops will be Mr. Đenan Ljevo, chef of the restaurant Šadrvan in Mostar.
