Kaljski brudet (Kali, otok Ugljan)
Ingredients:
- 1.5 to 2 kg of eel
- about 1 kg of potatoes
- a couple of onion heads (capules)
- a few cloves of garlic (onion)
- salt and pepper as needed
- 1 dl of olive oil
Preparation:
At the bottom of a large shallow dish ( teče ), arrange sliced onions (capula), then potato slices, on top of which pieces of cleaned eel are placed and garlic ( onion ) is added on top, which does not need to be finely chopped. Everything is covered with olive oil, salt and pepper and water is added to the level that should cover the fish (not to make it swim in water). Then the pot is put on high heat and cooked for approximately 45 minutes, with the fact that after half an hour the heat is reduced a little. Traditionally, Kalj brudet is prepared on an open fire, on which an iron tripod is placed, and a clay or iron vessel is placed on top of it.
