Ingredients for 5 people:

  • 1,250 kg of pork leg
  • 5 medium red onions
  • 3 cloves of garlic
  • 5 dcl of white wine
  • 50 g of pork fat
  • salt
  • pepper

Preparation

Meat cut into cubes (can also be cut into strips) is stewed in a spoonful of lard. Sauté until the liquid from the meat disappears, then add the red onion chopped into slices. Stew for about 20 minutes, i.e. until the onion softens well. Add white wine and continue to simmer until the liquid disappears. Add garlic, pepper and salt.

Serving

It is served warm in a pan. As a side dish, there is a young baked potato with rosemary and homemade bread.

Interesting facts about the dish

The recipe for Herzegovina pan was created during the pig slaughter – a custom that has been revered in Herzegovina for years. Before the “hard work” – for men prosciutto, pork loin and bacon, and for women cracklings, venison and sausages – a pan was made from pieces of small meat that were the first thing that was obtained from the slaughter, and it was the first dish that was made.

This advantage alone gave him special attention and careful preparation. In addition to being a gourmet dish, it is also a dish that connected the household and neighbors during the pig slaughter. All the household members were together, everyone was doing something, and the neighbors helped. Along with that, they drank local wine and brandy, and sang. In fact, spending time with loved ones is the spice that most embellished the taste of this dish.
