Culinary heritage in the program area was investigated through the project association of the Agency for Rural Development of Zadar County (AGRRE), the Ministry of Education, Science, Culture and Sports HNŽ-K, Zadar County, and Tivat Municipality.
Culinary heritage research is the result of the first phase of the project “EnhanCing Sustainable ToUrism Development through Culinary HeritAge – CUHaCHA”, which implies close project cooperation with the aim of joint implementation of activities aimed at developing common paths of culinary heritage for strengthening and diversifying the tourist offer, creating a monograph, culinary training, provision of services to ensure better management of the culinary heritage and arrangement of traditional kitchens to promote the culinary heritage of the program area.
The purpose of the culinary heritage research was, with the help of external experts, to collect traditional recipes, including ingredients, methods of preparation and serving, and to research interesting facts about traditional dishes.
Recipes of traditional dishes, apart from the cultural heritage monograph, will be available on the project’s website, while the trails of culinary heritage can be explored with the help of an interactive innovative map created.
During the project, a number of catering facilities will be included in the project activities, namely: restaurants, OPGs, agrotourisms, etc., and they will be provided with training in the preparation of traditional dishes.
