Pohane dagnje
Ingredients:
- 2 kg of cleaned dates
- 4 homemade eggs
- flour as needed
- 2 cloves of garlic ( onion )
- ½ dl of olive oil
- salt (if needed)
- parsley
Preparation:
Beat 4 eggs and add water from previously cleaned (garden) daganga. If it hasn’t rained for a long time, the mussels will be salty enough so it won’t be necessary to add salt, otherwise a pinch of salt is added. Add grated garlic and very finely chopped parsley to the mixture. Slowly add smooth flour until a breading mixture is obtained, in which the mussels are dipped and fried in hot olive oil. The dish is usually served with chard with potatoes and olive oil.
Note:
Breading as a way of preparing food is not typical for the area of Zadar County. This method of preparing mussels is called breaded mussels , although breadcrumbs are not used, which is common in the north. Posedarje is located in the very bay of the Novigrad Sea, which is known on the Adriatic for mussels of the highest quality. However, they are most often prepared simply on the buzara.
