Kroštule (krustuli, kroštule)
Ingredients:
– 3 eggs
– 1 and a half cups of white flour = about 30 dag
– 3 spoons of sugar
– half a glass (bičerina) of brandy (wine brandy)
– 2 tablespoons of fat or 3 tablespoons of oil
– a pinch of salt
– oil for frying
– powdered sugar for sprinkling
Preparation:
Beat the eggs in a deep bowl, then add the oil, vinegar, sugar and salt. Stir the mixture well and gradually add flour so that a firm dough can be made. Let the dough rest for about half an hour and then roll it out thinly on a floured board. Cut the thin dough into strips up to two fingers wide (2 to 3 cm) and tie the strips into a knot or some other shape. Fry in hot oil until golden, then remove from the oil, drain and immediately sprinkle with powdered sugar.
Remark:
Kroštula are a very simple cake that was prepared not only in the coastal area of Zadar County, but all over the Adriatic. It is a dish that originally comes from Hebrew cuisine and is known in different versions throughout the Mediterranean. They can also be prepared with olive oil, and in some places a little yeast (2 tablespoons) is added to the mixture. This recipe was recorded on the island of Pag. In our area, they are a mandatory dish on the Easter holiday table.
