Hip salad
Ingredients
2 bunches of hip, 1 bunch of spring onion, salt, olive oil, vinegar and from 4 to 6 hard-boiled eggs. A small head of young lettuce cut into strips can also be added to the salad.
Meal preparation
Wash the two hip ties well in cold water, then cut crosswise into pieces about 1 cm long. Do the same with 1 bunch of spring onions. Put everything together in a deep dish, pour a little olive oil, a little vinegar, salt and a little pepper, then mix everything into the salad.
Note: the tops or flowers of the hips should be discarded as they are bitter
Serving
Salad hooks go well with a glass of red wine.
Interesting facts about the dish
They got their name from their hooked appearance. It is a wild plant whose shoots grow by wrapping around and climbing up the thorn.
It is important not to cook them, because that way valuable minerals and vitamins are preserved. Hooks contain the most water, 93%. Of the vitamins, hookworms are the richest in vitamin C – 23 mg%, and it also contains a lot of carotene (provitamin A) and all group B vitamins.
