Ingredients:

  • 800g of asparagus
  • 8 eggs
  • A bit of wine vinegar
  • A bit of chopped parsley
  • Olive oil
  • Salt and pepper

 

Meal preparation:

Wash the asparagus, remove the lower woody part, and boil the soft part of the stem in hot salted water for four to five minutes. Drain the cooked asparagus and briefly immerse in water, then drain again. Pour 100 ml of olive oil, wine vinegar into a bowl, season with salt and pepper, parsley and mix the ingredients well. Then add the prepared asparagus and mix a little more. Eggs can be boiled, then cut into small pieces and mixed with asparagus, covered with dressing and served.

Serving:

It is served as a separate dish or as an addition to meat. It is increasingly consumed as breakfast.

Interesting facts about the dish:

Asparagus got the nickname “imperial vegetable” thanks to its popularity in Roman times, when subjects went to harvest asparagus for the emperors. Today, they are recognized as one of the healthiest foods in the world and a true culinary delicacy.
