Dough Fest… where did the idea for this type of event come from? The idea was born from a combination of several elements: In Baranja, we used to eat a lot of tisto, a dough made of field noodles, tornac or dry tisto sprinkled with nuts, poppy seeds, cheese, semolina, etc. My mother’s whole side is Šokci from Baranja, and I grew up eating delicacies with “tist” ” such as trganci, lokšice, taška and various stews and that in the best performance, from the golden hands of grandmother Eva Orikin. I was especially looking forward to lokšica – pieces of dough in the shape of four, which would be boiled with noodles, and sometimes baked on the stove. Lokšice were specifically intended for children in order to reduce “nagging” when lunch will be due to hunger and anticipation. The second item is frustration with various “sorrows”, most often fischiades and shepherd’s pies, which every village tries to have, by which we “prostitute” the most famous dishes of Slavonia and Baranja instead of making them into a tourist product and brand. Also, most restaurants in Baranja unfortunately do not have dishes of traditional Shoka cuisine, which is probably the reason why there is no Shoka restaurant. The key reason and inspiration for starting the festival was a visit to Istria at the end of last year, when I was surprised by the wonders that Istrians can make out of dough. It occurred to me to organize the “tista” Festival in Baranja, I went to Google to see if there was such a thing in Croatia and of course there is – in Istria and it looks phenomenal. That’s how we started to build a story with the aim of introducing traditional Šoká gastronomy into restaurants as well as branding “tista” as a gastro brand of Baranje. The preparation of the project began under the baton of the Karašicka Republika association, but it was soon recognized by the Osijek-Baranja County and the Regional Development Agency of Slavonia and Baranja, and it became part of the cross-border cooperation project with Serbia Central Danube Tour, i.e. part of the DunavArt Festival program in Batina. This is how the Dough Festival was born, which presents the traditional gastronomy of Šokač and the traditions of the Danube area in a modern and contemporary way.
