Ingredients for the dough:

  • 3 cups of plain flour
  • 3 eggs
  • grated rind of one unsqueezed local lemon
  • 4 spoons of sugar
  • 1 teaspoon of vanilla sugar
  • 4 tablespoons of fat or butter
  • 1 cup of milk
  • 1 baking powder
  • 1 tablespoon of yeast (fresh or dry)
  • powdered sugar for sprinkling

 

Ingredients for the filling:

  • 1 scoop of homemade cottage cheese from Pag
  • 2 eggs
  • 4 spoons of sugar
  • 2 teaspoons of vanilla sugar
  • grated rind of one unsqueezed local lemon
  • if desired, add a handful of raisins
  • lemon juice

 

Preparation of the dough:

Add yeast and a little sugar to the warm milk and let the yeast rise. Make a well in the middle of the flour, add softened butter, eggs, sugar, vanilla sugar, baking powder, grated lemon zest and add milk with yeast. Knead the dough and leave it in a warm place to rise a little.

Meanwhile, mix all the ingredients for the filling in a bowl.

Roll out the dough on a floured surface, cover with the filling and wrap in a rolling pin. Place the bender on the greased mold and leave it to rise for about half an hour in a warm place. Then put in the oven at 170 degrees for about 45 minutes. Sprinkle the slightly cooled dough with powdered sugar.
