Zelje s drobinom (Lukoran)

Ingredients:

  • 1 kg of veal or pork intestines (thin)
  • homemade corn flour (not instant polenta)
  • 1.5 kg of greens (peaches)

 

Preparation:

Wash the intestines in sea or salt water and then fry,  that is, to separate from excess tallow. Then the hoses should be turned over with a spoke  (with a thin peeled and cleaned twig) and wash them well again in plenty of water from the inside. Then they are well salted, mixed and washed once more to remove all impurities from the inside of the intestine. Pour corn flour into a wide container, rub it through your hands so that the flour sticks and then turn it again with a rolling pin so that the flour remains on the inside of the intestine. Boil the floured intestines for a short time, or blanch them in boiling water. Hoses prepared in this way can be wrapped around the branch at the chimney  to dry slowly and can be prepared or cooked afterwards. The dish is prepared with boiled greens, which on the islands usually means peach (cabbage similar to russet in the hinterland of Zadar).

Remark:

The entrails (intestines) prepared in this way require a rather complicated preparation, especially due to repeated cleaning. In the past, this dish was often prepared on the islands, until recently it was also available in certain taverns, which is very difficult today. Nowadays, intestines are usually no longer dried, but stored in the freezer and, if necessary, cut into pieces that are cooked with greens.
