Ripa s blitvom (Island Ugljan)
Ingredients:
- 1 larger or 2 smaller white beets ( turnips )
- about ½ kg of Swiss chard
- a piece of dry meat (pork) or bacon
- olive oil
- salt
Preparation:
Remove the outer leaves from the rudici and cut into smaller pieces. Wash well in several waters so that it does not remain impure ( mud, soil ). Clean the potatoes and cut them into pieces ( fette ) and put them to boil in plenty of salted water. When the potatoes soften a little, add the washed and drained radish and boil for a few minutes (do not overcook). Then drain and season with olive oil in a bowl. Add salt if necessary.
This is a very typical side dish served with meat or fish.
