Brudet od hobotnice i boba (Vinjerac)

Ingredients:

  • 1 kg of octopus
  • 3 potatoes
  • a cup of young beans
  • 2 heads of red onion (capules)
  • 3 cloves of garlic (onion)
  • 1 large tomato
  • 2 tablespoons of tomato concentrate (kunšerva)
  • salt, pepper
  • parsley
  • ½ cup of olive oil (about 1 dcl)
  • ½ cup of white wine (1 dcl)

 

Preparation:

Clean the octopus well, cut into pieces and boil. Fry the onion in olive oil in a wide pan, and after it softens, add the octopus cut into pieces and sauté. Then add finely chopped garlic, finely chopped or pureed tomato, tomato concentrate mixed in water, finely chopped parsley and white wine. Cover with water (or stock) and then add beans and diced potatoes, but make sure there is not too much water. Cook until the octopus and beans are soft.
