Brudet od bakalara (Island Pašman)
Ingredients:
– 1 dried cod (about 40 dag)
– 3 large potatoes
– A little garlic ( onion ) and a piece of leek
– 2 dl olive oil (or as needed)
– Salt, pepper
Preparation:
Soak dry cod in cold water at least one day before. When it is soft, clean it from the bones and cut it into pieces. At the bottom of a wider bowl ( teče ), put one large cut capula, then some pieces of garlic ( onion ), some leeks, and place pieces of cod on top of that. Add water to cover everything and olive oil. The heavier the cod, the more oil is used, if it weighs 40 dag, then up to 4 dl of oil is used. There should be enough liquid to cover the cod. Season with salt and pepper. Cook cod for approximately 45 minutes, then add diced potatoes. It should be shaken from time to time so that it does not burn, but do not mix. Cook for another half hour until the scab thickens.
Remark:
Brudet made of cod, like any brudet in the towns of Zadar County, is prepared in various variations. In some places, the cod is boiled before soaking, in many places a little whipped tomato concentrate is added to the brudet. Once upon a time, instead of cod, brudet was prepared from dried local tabinja fish for Christmas Eve.
